Yeasts are single-celled microorganisms, part of the fungus kingdom. The yeast species Saccharomyces cerevisiae has been used in baking and the production of alcoholic beverages for thousands of years due to its ability to convert carbohydrates to carbon dioxide and alcohols. Taken together, all yeast species are estimated to constitute 1% of all described fungal species in the world.
